Super BOWL of Chili

Our Superbowl party was hosted by our good friends Dan and Shauna of The Live Well Community.  Chef Shauna always blows me away by her tasty (and healthy) meals.  I'm always trying to duplicate (at home) whatever meal I had at their house the night before!

I thought I would share Shauna's chili recipe - it's as easy peasy & delicious!

  • 1 LBground beef
  • 1 can kidney beans
  • 1 can diced tomato
  • 1 Onion
  • 1 Pepper
  • 1 Carrot
  • 1 Clove Garlic
  • 1 Can of Corn
  • Salt & Pepper
  • 1 TBSP Chili Powder
    (Makes 4 servings)

Cook onions and the ground beef together - add the rest of the vegetables - add the beans & diced tomatoes - then add the seasonings.  Let it simmer on low for about an hour with the lid on.  Shauna always provides bacon/cheese/green onions/sour cream as toppings.  Paired with the meal is a salad & garlic toast.
